This is one of the projects I've been sitting on for a while and hope to start sorting out soon.  I plan on installing the K1100 16 valve head I picked up a while back to my A series and as I do further research I'll post some info and hopefully get some other builders to add their experience and input.

Here's a nice short video by Specialist Components of the UK showing their K1200 head conversion.

I've not been able to figure out ... is the BMW K series head use fuel injection throttle bodies?  Near the end of the video he's talking about the ECU and how it transparently connects to the original harness ... I assume he's talking about an MPI harness.  Any idea?

Pretty sure I've read about it both ways, carbs and FI, even turbo FI.  Personally I know injected is better but I guess I'm too old school and would opt for carbs.  I've even seen the 7 and 8 port cross flow heads set up with bike carbs which looks cool and seems to work good.
A popular option to using the bike ecu is Megasquirt which allows mapping the FI.

I'm old school with most things as well.  Carbs, on the other hand, have always been a bit of 'black magic' for me because I didn't grow up adjusting and rebuilding them.  I've had my share of carbed vehicles, but being that I'm a software engineer, the idea of being able to adjust the FI fuel and spark mapping draws me in.  I worked for an automotive diagnostics company for a few years and made a custom tuning program for our handheld scanner specifically so I could tune the stock TBI FI on my '87 Chevy pickup.  I could see doing the same for my classic Mini.

Overall I'm sure injection could be tuned for better performance and fuel economy, probably less maintainance and tuning too.

You may find some on this forum interesting:

It looks like most of the info is on the K head / Twinky.

Looks like a lot of good info for setting up injection.  Probably very helpful in building with a BMW  head.

The engine in this video looks like a really nice setup, though not typical.
